How a croissant gets its layers
Why a real croissant takes three days, and what those 27 paper-thin sheets of butter are actually doing.
A croissant is essentially an exercise in patience.
You start with a soft, lightly sweetened yeast dough — called the détrempe. You let it rest cold overnight so it’s slack and pliable, but not active.
Then you take a slab of cultured butter — the colder, the better — and pound it into a flat square. Cultured butter has more fat and less water than ordinary butter; that’s why it laminates. Indian table butter has too much water; it’ll tear the dough.
You wrap the butter inside the dough. You roll it out. You fold it into thirds. You rest it cold. You repeat. Three folds, three rests. By the third fold, you have 3 × 3 × 3 = 27 layers of butter and dough — alternating, paper-thin.
Now comes the second slow part: the proof. A laminated dough has to rise without melting its butter. Too warm and the layers fuse. Too cold and it won’t rise. The kitchen needs to sit somewhere between 24°C and 26°C — easy in Paris in March, much harder in Amritsar in June. We bake before the day gets warm.
In the oven, water in the butter turns to steam. That steam pushes the dough layers apart. The dough sets in tension, holding the air between the layers. The exterior caramelises into that copper crust. When you cut a properly laminated croissant in half, you should see a honeycomb — open, irregular, glossy.
If you don’t see honeycomb, one of three things went wrong: the butter was too warm during the folds; the proof was too long; or the oven was too cold to set the structure before the layers collapsed.
There are no shortcuts. There’s no machine that does it better. Three days, three folds, three rests, and one good croissant.
